Light Potato Salad

Perfect for summertime!  I had made a small batch in advance and when I got home from work, I was able to enjoy some nice, cold potato salad.  A very easy make!

I boiled two medium russet potatoes in water.  Peeled the skin once they were done.  Chopped them up into cubes and seasoned.  For the seasoning, I first mixed a little bit of milk with two spoonfuls of mayo.  Then tossed in an even amount of salt, pepper, and garlic powder.  Added a dash of dried parsley.  And to finish it off, I mixed in a few spoonfuls of finely chopped onion and scallions as I mixed the potato up.  Then, popped it in the fridge and left it to the next day to enjoy.  It was the perfect snack on a hot day.
